How do i get my hamster used to me?

I've had my hamster for almost a year now ( hes a dwarf ) anyways, hes soo cute and i love him to death ( btw hes my 3rd hamster ) and hes not like my others.. All of the hamsters i have had would like to be held and they would just sit in my hand and let me play with them. Also, when i would open their cage door they would come running to it and crawl out of it onto my hand. My current hamster doesnt do that :( at night sometimes i open the cage and put one of his favorite treats on my hand and he will crawl out and eat it but he never likes to stay in my hand long. seriously maybe a minute if that. He'll get all riled up and it's almost like he gets nervous and then he starts to leave little poo drops. I got him when he was just a baby so I dont know. Also when i go to get him and try to put my hand in the cage he just runs away up into his wheel where i cant get him :(. ive never been mean with him or anything ive always been very gentile. is there anything i can do to get him more used to me and being out of his cage for a little bit?
