Horse bolts after fences.?

I have been horseback riding for years and I would consider myself a fairly advanced horseback rider. My position is good over fences and I have light hands. I recently fell in love with a horse, but he bolts after every fence. I'm not a timid rider, and I'm willing to try anything to make this work. He is a paint-so he does have the quarter horse blood in him which would make him more likely to bolt. He is half thoroughbred. His father was a champion jumper (also a paint). From my understanding, he has been over faced by jumping too high when he was younger. He is now 7 years old. I would really like to know if this kind of thing can be fixed. My riding instructor said that it would take too much time and effort and that it wouldn't be worth it. However, I have a stubborn mindset, and I really love this horse. Please help. I realize that if I love the horse a lot then it wouldn't be about jumping-but it's what I do for fun, so I would like to make this possible. Thanks in advance for any help.
